What you'll do

• Assist with kitchen operations and staff leadership
• manage physical and high-cost inventory, purchasing, food cost, labor, schedules, and par levels
• follow order guides and quality and pricing standards
• oversee food quality, recipes, product rotation, line checks, sanitation, temperature logs, and kitchen opening and closing procedures
• participate in management meetings, staff pre-shifts, events, menu changes, launches, daily specials, and omakase menus
• communicate with chefs and sous chefs.
