What you'll do

• Follow company food and beverage menu and purchasing programs
• monitor food-operation revenue, costs, labor, supplies, and cash flow
• review monthly profit and loss statements
• plan, supervise, and execute banquet functions when the Kitchen Manager/Chef is absent
• estimate food needs and make purchases
• schedule staff
• support disciplinary matters with the Kitchen Manager/Chef or General Manager
• oversee food preparation, portioning, presentation, and storage
• assist with equipment maintenance and sanitation audits
• maintain a clean, safe environment and report critical issues.
