What you'll do

• Prepare sushi, sashimi, and maki rolls to restaurant standards
• apply fish-quality knowledge and proper cutting techniques
• maintain consistent cuts, portions, and plating
• follow food-safety, sanitation, and HACCP guidelines for raw fish and seafood
• prepare ingredients, rice, and sauces
• maintain an organized sushi station
• monitor inventory and freshness
• collaborate with kitchen and service teams
• provide recommendations to guests when appropriate.
