What you'll do

• Break down large game animals into primal and subprimal cuts
• trim, bone, and prepare meat to customer specifications
• prepare specialty cuts, sausages, and ground meat
• package and label meat
• ensure proper chilling, hanging, and storage
• follow health and safety requirements
• inspect carcasses and identify quality issues
• clean and maintain equipment and work areas
• advise hunters and customers
• assist with delivery, inventory, and processing records.
