What you'll do

• Oversee the dietary department and supervise dietary staff
• oversee food and supply purchasing within budget
• guide diet planning, menu formulation, preparation, and service of regular and therapeutic diets
• ensure menus reflect resident needs, preferences, physician orders, and regulations
• obtain diet histories and maintain records of food preferences
• review nutritional progress notes and visit residents to assess meal quality
• complete required nutritional assessments and care-planning documentation for a single location
• monitor weights and collaborate with nursing staff
• verify special-diet meals and snacks
• monitor food production, tray line, sanitation, safe food handling, and disaster-preparedness supplies
• maintain records, budgets, and supplies
• participate in quality assurance and performance improvement.
