What you'll do

• Prepare sushi, sashimi, and maki rolls
• apply fish-quality knowledge and proper cutting techniques
• maintain consistent knife cuts, portions, and plating
• follow food safety, sanitation, and HACCP guidelines for raw fish and seafood
• prepare ingredients, rice, and sauces
• maintain an organized sushi station
• monitor seafood and produce inventory
• collaborate with back- and front-of-house teams
• engage with guests when appropriate
• complete tasks assigned by kitchen leadership.
