Production Manager / Head Baker – Commercial Baking

What you'll do

• Purchase inventory
• review orders
• build the bake schedule
• assign and train crew
• manage mixing, dough development, fermentation, proofing, baking, cooling, and slicing quality
• monitor product weights, dimensions, color, texture, and appearance
• oversee food safety and sanitation compliance
• track waste and yield
• check equipment and perform preventive maintenance.
