What you'll do

• Follow fryer safety procedures, including cold starting and filter maintenance
• set fryer temperatures as specified
• prepare marinades and schedule draining and completion times
• manage fryer load quantities, cook times, and stirring intervals
• sift flour and change filters as directed
• change side fryers after lunch and dinner rushes
• marinate tenders, chicken, livers/gizzards, and fish
• prepare and monitor batter.
