What you'll do

• Instruct and supervise inmate workers
• prepare meals and trays according to counts and approved menus
• prepare special diets as directed by the registered dietician’s plan
• maintain kitchen sanitation
• receive and store food orders
• rotate stock
• follow food-service procedures
• report operational problems.
