What you'll do

• Prepare sushi, sashimi, and maki rolls to Benihana standards
• apply fish-quality knowledge and proper cutting techniques
• maintain consistency in cuts, portions, and plating
• follow food safety, sanitation, and HACCP guidelines
• prepare ingredients, rice, and sauces
• maintain a clean and organized sushi station
• monitor seafood and produce inventory
• collaborate with kitchen and front-of-house teams
• provide recommendations to guests when appropriate.
