The fishmonger receives, inspects, prepares, and stores fish and seafood to sushi-grade standards. Careful handling, fabrication, food safety, and coordination with sushi chefs help maintain product quality and support the restaurant’s culinary program.

What you'll do

• Receive and inspect fish and seafood for freshness, temperature, and quality
• verify orders and reject items that do not meet sushi-grade standards
• document receiving and traceability
• break down, fillet, portion, and fabricate fish and seafood
• prepare product to chef specifications
• maintain knives and tools
• label, date, and rotate product
• track usage and par levels
• support purveyor relationships and sourcing feedback
• maintain storage areas
• follow HACCP, sanitation, and food-safety protocols.
