What you'll do

• Prepare and refine sauces, reductions, and stocks
• follow recipes, portioning, and seasoning guidelines
• monitor texture, temperature, and flavor
• coordinate with chefs and line cooks
• assist with butter-based, wine-based, and demi-glace sauces
• produce stocks and broths
• organize and label mise en place
• finish and plate sauces
• maintain station cleanliness and sanitation
• follow health department and safety requirements.
